- Add onion, carrots, celery, and garlic to the slow cooker as the base layer.
- Season chicken with salt and pepper; place on top of veggies. Add thyme, rosemary, and pour in chicken broth.
- Cook on high for 4–5 hours or low for 7–8 hours until chicken is tender. Shred and return to pot.
- Whisk cornstarch with hot broth, stir into soup. Add cream and gnocchi; cook on high for 45 minutes. Stir in spinach at the end and season to taste.
Notes
For extra depth of flavor, use homemade chicken broth and freshly chopped herbs. Gnocchi can absorb liquid when stored, so reheat with added broth.
