  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
  • 1/2 cup sour cream
  • 1 cup Monterey Jack cheese shredded
  • 1 tbsp lime juice fresh
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can corn drained
  • 1/2 cup heavy cream
  • 4 green onions sliced
  • 1/4 cup cilantro chopped
  • 1 jalapeño sliced, optional
  • 1/2 tsp chili powder
  • 1 cup Greek yogurt for topping, optional
  • 1 avocado sliced, for serving

Method
 

Instructions
  1. Add chicken breasts to the bottom of the slow cooker.
  2. Add beans, corn, green chilies, and chopped onion on top.
  3. Sprinkle in all the dry spices: salt, pepper, cumin, oregano, paprika, onion powder, garlic powder, cayenne pepper, and chili powder.
  4. Pour chicken broth and lime juice over everything.
  5. Cover and cook on low for 8 hours or high for 4 hours, until chicken is fully cooked.
  6. Remove the chicken from the slow cooker and shred it with two forks.
  7. Return shredded chicken to the pot and stir.
  8. Add sour cream, heavy cream, and shredded cheese.
  9. Stir everything until well combined and cheese is melted.
  10. Taste and adjust seasoning if necessary.
  11. Keep warm until ready to serve.
  12. Ladle chili into bowls.
  13. Top with sliced green onions and cilantro.
  14. Add optional toppings like Greek yogurt, avocado, or jalapeños.
  15. Serve with tortilla chips or warm bread on the side.
  16. Refrigerate leftovers in an airtight container for up to 3 days.
  17. Reheat gently in microwave or stovetop until hot.
  18. Freeze leftovers up to 2 months for future meals.
  19. Stir before serving if reheated from frozen.
